For years I have drooled over the brilliant recipes from the delicious magazine. There are many recipes I love to dream about, but as I am time poor, these often stay in the pages rather than on the plate.

But there are a few favourites I make time and time again because they are easy and full of flavour from one of my favourite chefs, Jamie Oliver.

Chicken Hot and Sour Soup With Pumpkin

It’s worth sourcing fresh lime leaves for this fragrant soup, (or I keep a jar of chopped lime leaves in the pantry) – the flavour and perfume is incredible. If you’re feeling under the weather, a bowl of this is sure to revive you, but it’s equally wonderful any night of the week, says Jamie, but it is a soup that will fill many empty tummies.

A generous pasta bake that is an easy way to feed a crowd. You can impress your friends by making the pasta sheets like Jamie, but if you are time poor like me, then I buy good quality lasagne sheets to save time and mess!

As a lover of roasted pumpkin and onions and vegetarian food, this is perfect for when the evenings start to get colder. “It’s simple, but seriously comforting,” says Jamie, and I have to agree.

Any recipe that is low in fat, quick to make, full of flavour only using a few ingredients AND baked in the oven is a winner in our home. I have served this up to friends who all love it.

There is no set recipe for a thick Italian minestrone soup, it’s one I play around with often as it can be made on the weekend for a couple of nights during the week. This one is a fav because of the mix of greens Jamie uses and borlotti beans which the soup thick and hearty without the calories.
