Sick Of Take Away? 2 Quick And Easy "No Pastry" Quiches
As the weather becomes warmer I want to switch to lighter meals, especially ones that are quick and easy to make, throw into the oven so I can go for a walk, then enjoy with a salad.
Here are two of my favourites that I hope become yours too.
Self Crusting Zucchini Quiche
3 Rashers Bacon (Omit for vegetarian)
1 cup Grated Matured Cheese
1 lge cup SRF
1 pkt French Onion Soup
1 small clove garlic
Tomato for top.
Grate Zucchini, chop onion and bacon. Finely beat eggs well and add to vegies. Add soup and garlic, thicken with sifted SRF. Bake moderate oven 30-40 minutes or until browned.
Caz’s Vegetable Quiche
1 Large Onion
3 Bacon Rashers (Omit for vegetarian)
1 cup Grated Cheddar Cheese
1 cup SRF
½ cup Oil
Grate Zucchini. Chop Bacon and Onion. Combine Zucchini, Onion, Bacon, Cheese, sifted flour, oil, lightly beaten eggs, salt and pepper.
Pour into greased lamington tin.
Bake in moderate oven 30/40 minutes or until brown.
Please play around with these recipes. Place into muffin tins for lunches, change or add your favourite vegetables, such as spinach or carrot.
