A Healthy Quick And Easy New Age Roast

The good old roast has been a favourite tradition forever and one my family has always enjoyed.  But sometimes I am too time poor to do the traditional roast, and sometimes I felt the roast was too "heavy", especially with the sauces.


So over time, I have adapted the roast to suit us all.

Our new age roast is brilliant, as you can place in the oven if you have a meeting or are running kids around to sport.  All I do is put a small amount of meat (any meat you desire or omit if vegetarian) and vegetables in the oven to roast.  Any vegetables can be used.  Roast on a temperature that suits your cooking time and when you get home it's ready to prepare, which also only takes a couple of minutes.

To make my preparation super quick, I buy the vegetables pre-chopped from LaManna, or you can purchase from your local supermarket or greengrocer.


Here is the twist!

Make your roast into a warm salad by placing some rocket, lettuce or other greens into a bowl, chop up some cherry tomatoes and other salad items (an excellent way to clean out your fridge), mix in with the roasted vegetables and then serve if vegetarian.  Or add meat to the top of the dish.  I also add some of my homemade pesto for extra greens, Japanese Mayonnaise, or as per the image above, yummy onion relish. 


Or roast up different kinds of vegetables, including beetroot, zucchini, corn, carrots and Brussel sprouts and serve on a large board.

It's super easy and healthy.  Experiment with the dish.  Try a Greek salad with lamb, or add mangoes to a chicken dish.  Add toasted seeds and nuts for some crunch, or some yummy cheese.  


Or if you would like to be super adventurous, give Matt Prestons Crusted Lamb Shoulder With Beetroot Salad.  I made it easier by using pre packaged beetroot and not making the bread.  The flavours were incredible, especially with the dates, pomegranates, pistachio nuts, fetta cheese and herbs.  I have made this twice now as it's a huge hit with the family.
