Healthy Summer Recipes That You Will Love
Beautiful Angelica or Gel was a writer for Cazinc Blog, but we were thrilled when she told us she is branching out to run her own blog this year.
Healthy eating is more accessible in summer when there's plenty of fresh fruit and veg on, and it’s super easy now as Gel has fabulous recipes you will love. We know you will like these recipes because the Cazinc team enjoy making them! In fact, we had huge debates amongst our team about which ones to share with you as all the recipes are easy to make and delicious.
Here are our favourites for summer:
Creamy Chocolate Smoothie Bowl.
This is my current breakfast obsession!! The addition of cashews to this smoothie makes the texture so creamy and keeps me full right through the morning. I think the recipe is sweet enough as it is, but feel free to add a couple of dates if you want it a bit sweeter. I love topping this with some oats and almonds because I like a bit of texture and crunch in my smoothies. In the past I have prepared this the night before and left it in the fridge overnight and it is still perfectly delicious the next day! You could change the nuts you use in this recipe if you don’t like cashews, however I think it is the cashews that make this recipe so special. I hope you try this one out!!
2. Pumpkin And Fruit Loaf
A craving for fruit bread a couple of weeks ago inspired me to create my own one at home! The first time I made it I was making up as I went along. I just used what I had on hand and was really happy with the result. I made a couple of adjustments to ensure I had the best possible version possible. Feel free to mix up the fruit and nuts you use. This recipe would be equally delicious if it was made with dried apricots and almonds. Like always, use what you have lying around your cupboards you might be surprised with what you come up with!
3. Zia Tracy’s Roast Pumpkin, Spinach and Feta Salad
A couple of weeks ago my Zia and Zio invited my family over for dinner at their house. Zio made gyros on the spit outside (lots of lamb and chicken) and Zia prepared some beautiful salads to go with it. One of them was this beautiful Roast Pumpkin, Spinach and Feta Salad. I was so excited that she let me share this one with you because it is so delicious!! It doesn’t take long to come together and is a crowd favourite! With grand final weekend coming up and so many celebrations creeping up for the end of the year, this is a fantastic one to bring along to a barbeque to share with friends and family. I hope you love it as much as I do!!
4. Beetroot and Chickpea Burgers
(Caz’s ultimate fav)
I was overwhelmed with how much my family loved this recipe and just had to share it. We had ours on top of a beautiful salad. This would be perfect in Spring and Summer because it isn’t too heavy and can come together easily if you want more time to enjoy the sunshine.
5. Fish Tacos
Fish tacos are one of my favourite dinners to share with my family. It is a chance for everyone to get super creative with what they want in them and what they want on the side. I am a simple person, so I am more than happy with some avo and a beautiful salad on the side. I have kept this recipe really simple so that YOU can have a play with what you want to put in them! I hope you try this one out, they are delicious if I do say so myself!
