A Simple Soup Recipe
Ok Melbourne, it is supposed to be spring, but we are having snow and storms. Such a shock to my system to come home from Italy to be frozen to the core.
My gorgeous husband Simon was away last week in Japan so I decided to make a huge pot of soup for James (my son) and I for the week. James and I loved our "PJ" week enjoying our soup, snuggled up together on the couch.
So simple and delicious, I thought I would share.
There can be many variations to this recipe, a great way to experiment. I have added a few below.
Garlic (1 or 2 cloves)
Bacon - chopped to make quicker, or chicken to add flavour, but omit if vegetarian
2 tins tomatoes
1/2 packet soup mix
Stock (beef, chicken or vegetarian).
Parsley (in vegetable pack) add chopped just before serving.
Place some oil in a large saucepan. Fry up chopped onions, garlic and bacon.
Add all other chopped vegetables. You can add or omit any vegetables. I added some silver beat to the dish for the last night.
Add all other ingredients and cover with water.
You can exchange soup mix for pasta or have both if you wish.
Now is also the time to add the secret ingredient, a tablespoon or 2 of vegemite. This is a secret from Simon's Nana Rowland (see her famous macaroni and cheese recipe here). Nana Rowland always added vegemite to soups and stews for extra flavour. And it works.
Cook for a few hours.
Top with parmesan cheese, salt and pepper. Enjoy with crusty bread or on it's own.
James and I ate this for 3 nights and I have more in the freezer so a quick, cheap and healthy meal to make life easy for the week.
