If you have as many parties as we do at the moment, and you are trying to keep your weight down, it's always advisable to eat before you leave so you don't snack all night.
Here is my super easy and healthy smoked salmon party saver, quick, easy and healthy frittata.
Boil one cup frozen peas 3 min, drain and mix in large bowl with 8 eggs, handful ricotta cheese (broken up), 1 bunch chopped up asparagus, 100g smoked salmon, few chopped chives, Zezt 1 lemon, pepper.
Place in lines tray and cook 180 degrees 30 - 40 min.
Snack while getting ready and have a great night.
